Special feature: Semi-oxidized Oolong tea, made from old Dan Cong tea trees grown in the Feng Huang Mountains. This unique "Duck Droppings" or Ya Shi Xiang ( 鸭屎香) vintage surprises with the richness of its bouquet, infinitely floral and fruity, in total contrast to its original name.

Bouquet: An opulent floral fragrance dominated by wisteria and tiare flower, enveloped by fruity aromas of ripe mango, quince, sweet vanilla, and dried apricot. The whole is enhanced by subtle, fresh, herbaceous notes of wild mint and sage. A complex and elegant liqueur that evolves gracefully with each infusion.
Properties: This Dan Cong, crafted using traditional Chaozhou artisanal methods, retains all of its natural aromatic compounds. Lightly oxidized, it combines vegetal freshness, fruity depth, and floral structure. It is ideal for lovers of refined teas, both expressive and nuanced, perfect for moments of calm and contemplation.
Dosage: 8 grams is enough for about ten Gongfu Cha infusions. Each time, the tea reveals a new facet of its floral and fruity profile.
Preparation: Use low-mineral, filtered or spring water.
Heat the water to 100°C and pour it directly onto the leaves:
- First infusion: very quick (6 seconds), to wake up the leaves
- Second infusion: 10 seconds
- Third infusion: 15 seconds
- Subsequent infusions: add 6 seconds to each pass
This is very personal because the locals leave it for 3 minutes to have strong and astringent aromas, which produces a powerful “Hui Gan” (return in the mouth).
Prefer short infusions to capture the finesse of floral aromas and the liveliness of fruity notes.
Taste: A delicately floral and fruity palette: wisteria, tiare, jasmine, enhanced with melting mango, vanilla, candied quince, and juicy apricot. The finish is persistent, slightly minty with a touch of sage, bringing freshness and balance.
Tone: Bright, very pale green liqueur with golden highlights, clear and brilliant.
Storage: Store in a cool, dry place, away from light and strong odors.
