Bouquet: An intense floral scent evoking hyacinth, followed by delicate notes of lychee and buttery pastry. The finish is remarkable, with a persistent and refined sweetness.

Properties: This tea is renowned for the fineness of its leaves and its traditional manufacturing method, which gives it a natural richness in aromatic compounds. Lightly oxidized, Tie Guan Yin stands out for its vegetal and floral freshness, and for a complexity that evokes both green teas and more mature teas. It is often appreciated for its lightness, ideal on hot days or in spring.

Dosage: An 8-gram sachet is enough for about ten infusions, even for multiple people. As with any high-quality tea, the aromatic richness will depend on the infusion time. To preserve the subtlety of the first notes, opt for short infusions during the first few passes.

Preparation: Preferably use low-mineralized water, such as filtered or spring water, to respect the purity of the tea.
Heat the water to 100°C then pour it directly over the leaves:

  • First infusion: very quick, just to awaken the leaves

  • Second infusion: 6 seconds

  • Third infusion: 9 seconds

  • Then add 3 seconds per infusion according to your taste

The tea should not steep for too long; it is preferable to infuse it briefly to bring out its delicate and evolving aromas.

Taste: A fine and floral aromatic palette: wild lily, hyacinth, jasmine, combined with nuances of buttery biscuit and light mineral and roasted touches.

Tone: Its liquor is bright, a very pale and crystalline green.

Storage: Store in a cool, dry place, away from light and strong odors.
To best preserve its freshness, it can be stored in the freezer, as is practiced in China.
Preferably consume within the year.
